Yogurt-Marinated Chicken Kabobs

Ingredients

2 lbs. boneless, skinless chicken breast
1 cup plain yogurt
Juice and zest of two lemons
3 TB olive oil
2 cloves garlic, sliced
1/2 cup chopped flat-leaf parsley
1 tsp smoked paprika
Salt and pepper

Instructions

Cut the chicken into 1-inch cubes and place in a gallon-sized Ziploc® brand Storage bag with Easy Open Tabs.
In a medium-sized bowl, whisk together the yogurt, lemon juice and zest, olive oil, garlic, parsley, paprika and salt and pepper.
Pour the yogurt mixture into the Ziploc® brand Storage bag with Easy Open Tabs with the chicken and seal, pushing out as much air as possible.
Shake the bag to coat the chicken with the marinade.
Refrigerate for at least four and up to eight hours.
Thread the chicken onto skewers, alternating with vegetables if desired.
Place skewers on preheated grill brushed with oil.
Grilled until browned and cooked through, turning occasionally, about ten to twelve minutes.
Serve warm.
