When you get home, simply thread the chicken onto skewers — with some vegetables if you are so inclined — and grill or broil for 10-12 minutes. Ingredients
- 2 lbs. boneless, skinless chicken breast
- 1 cup plain yogurt
- Juice and zest of two lemons
- 3 TB olive oil
- 2 cloves garlic, sliced
- 1/2 cup chopped flat-leaf parsley
- 1 tsp smoked paprika
- Salt and pepper
Instructions
- Cut the chicken into 1-inch cubes and place in a gallon-sized Ziploc® brand Storage bag with Easy Open Tabs.
- In a medium-sized bowl, whisk together the yogurt, lemon juice and zest, olive oil, garlic, parsley, paprika and salt and pepper.
- Pour the yogurt mixture into the Ziploc® brand Storage bag with Easy Open Tabs with the chicken and seal, pushing out as much air as possible.
- Shake the bag to coat the chicken with the marinade.
- Refrigerate for at least four and up to eight hours.
- Thread the chicken onto skewers, alternating with vegetables if desired.
- Place skewers on preheated grill brushed with oil.
- Grilled until browned and cooked through, turning occasionally, about ten to twelve minutes.
- Serve warm.
