Two of my great loves, cheese and cookbooks, together at last! Earlier this year, my friends at Cabot Creamery released their first-ever cookbook, The Cabot Creamery Cookbook. This stunning book features recipes for every meal of the day that are filled with all kinds of dairy goodness. The dozens of recipes, for baked goods, soups, salads, dips, main courses and sinful desserts, all come from the Cabot farm families.
In addition to the recipes, this cookbook contains beautiful photos and charming stories of New England farm life from the families that make up the Cabot Creamery Cooperative. Reading this book whet my appetite for my visit to Vermont later this year — my prize from coming in second in the Cabot Creamery Farmers Legacy recipe contest. We simply do not have rolling green hills like those in north central Illinois!
To see some of the recipes in the Cabot Creamery Cookbook, recipes like the ones for the Richardson Family Farm Lemon Yogurt Pound Cake and Freund’s Farm’s Sweet Corn Pudding pictured here, visit Cabot’s website. You can also find where to buy your own copy of the Cabot Creamery Cookbook.
Not only did Cabot Creamery send me a copy of their cookbook for my collection, but I also have a copy to give away. One lucky West of the Loop reader will receive a copy of the Cabot Creamery Cookbook AND a Cabot Creamery gift box worth $25. That’s a box of cheese, people. Cheese. Sent to you in the mail. So the next question, clearly, is how to enter the giveaway.
To enter the giveaway, leave a comment to this post telling me your favorite dairy-based recipe. Is it a homey macaroni and cheese? A yogurt-based dip? A silky quiche? Maybe something sweet, like cheesecake? Leave your comment by Friday May 22. I will select a winner at random. Good luck!
Full disclosure time: I received a complimentary copy of the Cabot Creamery Cookbook and the prizes for this giveaway will be furnished by Cabot Creamery. I have not received any compensation for this post or for hosting this giveaway. As always, all opinions expressed herein are entirely my own.
Oh I have two great cheese recipes one is a delish marscpone cheesecake and the other is a to die for black-eyed pea dip that I begged from a local restaurant for 3 years before they finally gave into my whining and begging…but at least I can eat it anytime now 🙂

My favorite dairy based recipe is as follows. Take a bowl. Fill almost to the top with Cap’n Crunch cereal. Add milk (preferably whole). Enjoy. Author’s Note: The crumbs at the bottom of the box are the best part.
Just one recipe? I eat cheese all day long! The little snacking bars are great on their own. Shredded cheese on a salad makes it a meal. My Baileys Irish cream cheesecake is a delight.

When we visit Vermont, which is usually twice a year, we always buy a block of Cabot cheddar in the green box. I’ve never found a more perfect cheese for what my mother called “baked macaroni and cheese.” I make it with a rich Bechamel sauce and that amazing Vermont cheddar. You can fancy it up with other ingredients, but for me and my family, simple is always best. I also like to make quiche with it, varying the ingredients depending on the season.
I loved the last thing I’ve made which was a buffalo chicken quinoa bake in which there was definitely some dairy (greek yogurt, cheese, bleu cheese dressing) it was so yum. Ty for a great giveaway!
